We try to find simple food ideas to showcase our sauces., then, we add a little Haht Sahs twist to give it a kick, Here is our version of the mini-corn muffi, with a little suprise inside. These are delicious at any time of day even as a midnight snack.
3 cups all purpose flour
1 cup organic sugar
1 cup stone ground cornmeal
2 tablespoons baking powder
1 1/2 teaspoons kosher salt
1 1/2 cups whole milk
1/2 pound unsalted butter, melted and cooled
4 large eggs
1/2 tsp cayenne pepper
*1/2 cup chopped green olives
*1/2 cup black olives
*1/2 cup corn
*1/2 cup pulled pork or sausage, or hamberger meat, if desired.
(use your imagination - and put whatever you want into these muffins.
3/4 cup Haht Jam!. Haht Syrup, or Haht Sahs - HOT or Medium
Preheat over to 350 degrees F.
Line a 48 mini-muffin cup tray with paper liners. In the bowl of an electric mixer fitted with a paddle attachment, mix the flour, sugar, cornmeal, baking powder, and salt and cayenne pepper.
In a separate bowl, combine the milk, melted butter (cooled), and eggs. With the mixed on lowest speed, pour the wet ingredients into the dry ones and stir until they are just blended. Don't blend too much.
Place a few bits of the desired item into the bottom of each paper lining. (See * above for ideas) Leave a the muffins plain if desired. Itis up to you. If you don't have a piping bag, make one out of a ziplock baggie,. It may take 3 separate baggies to fill entire tray and it may get messy if you haven't done this before. Open the baggie wide and bend down the sides like you are folding down a sock half way. Spoon in the mix and close. Cut one edge of the baggie at 1/4". Sqeeze mixture into each paper liner, covering the items on the bottom and filling each one to the top. Sprinkle a tiny dash of cayenne on the top of each muffin.
Bake for 12-15 minutes, until tops are crisp. Do the toothpick test. If clean, they are ready. Cool slightly and remove from tray.
When ready to eat, remove paper lining and spoon the Haht Sahs of your choice on top.
